Blueberry & Avocado Salad



Along with the warm summer days, I was sure that blueberry season was long, long gone. Apparently (and thankfully) I was wrong! Just look at these incredible blueberries I found at Whole Foods. Trust me, I ate my fair share of them plain, but I wanted to use them in one of my favorite, slightly heavier snacks that I often turn to on days where I plan to workout a little harder. Enter the blueberry & avocado salad. Seems totally weird, right? Well it is, but this pairing for me is a winner.







I know, I know…this looks…interesting. A combo most people would never put together, but something about it is remarkably good. The tart blueberries and creamy avocado pair fantastically together, and a squeeze of lime juice over the top makes it downright refreshing. Not only is this salad delicious, it is also loaded with beautifying, heart healthy fats, as well as potent antioxidants.







The original recipe comes from a book by celebrity nutritionist Kimberly Snyder called The Beauty Detox Foods. You will hear me mention her book quite often throughout my posts, as it has literally changed my outlook on food and the way I eat on a daily basis. I would highly recommend either of her books to anyone who is interested in learning more about nutrition in general, and how natural, whole foods can help you become your most radiant self.

Recipe: Blueberry and Avocado Salad

Summary: A healthy, refreshing fruit salad

Ingredients

  • 1 medium ripe avocado peeled and cubed
  • 3 cups fresh blueberries
  • 3 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon stevia (optional)

Instructions

  1. Add blueberries and cubed avocado to a mixing bowl
  2. Whisk together lime juice and stevia
  3. Pour lime and stevia mixture over fruit and gently mix
