Apple Pie Chia Seed Pudding



Chia seed pudding is my go-to pre-workout snack. If you’re a late afternoon exerciser like myself, chia seeds make a perfect mid-afternoon snack to fire you up and increase your overall workout performance. As stated in my Banana Nut Chia Seed Breakfast recipe, chia seeds provide us with sustained energy for a minimal amount of calories, while also hydrating our bodies with their ability to absorb 12x their weight. I am always trying out new recipes to mix my chia seed pudding up, and this Apple Pie Chia Seed Pudding was definitely a winner in my book. This recipe is super simple to make if you have a food processor, yet not too difficult if you don’t. Give it a try and let me know what you think.

Apple Pie Chia Seed Pudding

A delicious chia seed pudding that makes a perfect anytime snack.
Ingredients
  • 1 medium/small apple (I used an organic fuji apple); cut into chunks
  • 2 Tbsp. chia seeds (I used the black chia seeds, but white would also work fine)
  • 1 cup of unsweetened vanilla or regular almond milk
  • 6 medjool dates; pit removed
  • 4 tsp. ground cinnamon
  • 2 tsp. ground nutmeg
  • 1 tsp. ground cardamom (optional)
  • 1/4-1/2 cup raw walnut halves
  • 5 drops liquid stevia or 1 tsp. granulated stevia
Instructions
  1. In a medium sized mixing bowl, whisk together 2 Tbsp. chia seeds and 1 cup almond milk. Set mixture in fridge, but continue to stir every 5 minutes for at least 15 minutes.
  2. In a food processor, combine apple chunks, dates, walnuts and seasonings (include stevia if using granulated form). Blend until everything is well mixed and finely chopped.
  3. Remove chia seed pudding from fridge and add in apple mixture (if using liquid stevia, add this in as well). Whisk thoroughly to combine and cover mixture.
  4. Place pudding back into the refrigerator and let it set up for at least 30 minutes.
  5. Stir before serving.
  6. Top with apple chunks, extra walnuts, hemp seeds, etc. (optional)
