Gluten Free Banana Pancakes



Mmmm, pancakes. They make eating dessert for breakfast 100% acceptable. I love a good stack of pancakes, but when my doctor discovered my gluten intolerance, pancakes became a distant memory. I have tried countless gluten free versions over the past year, but so far, not one has measured up to my pancake expectations, which, by the way, are incredibly high (almost weirdly high, considering they are pancakes). They have to be fluffy and springy like regular pancakes, which is honestly the most difficult thing to achieve in a gluten free recipe, but after a whole lot of experimenting, I was finally able to achieve the gluten free pancakes I had been dreaming of. Anyone will love these pancakes. Kids will love them, gluten eaters will love them, and most importantly, you will love them. They are super easy to make, and if you have a large non-stick griddle, they don’t take a whole lot of time to cook either. Ben ate an entire stack (that’s 8 pancakes!!) in less then 10 minutes, and actually wanted more until it all hit his stomach after eating them so fast. He said we are definitely making these again, which by ‘we’ he meant me, and yes, I will definitely be making these again.

These gluten free banana pancakes are pancakes that everyone will love.
Ingredients
  • 3 small/medium bananas, mashed
  • 2 Tbsp. virgin, unrefined coconut oil, melted
  • 1 teaspoon 100% pure maple syrup
  • 1 Tbsp. lemon juice
  • 2 flax eggs (2 Tbsp. ground flax seeds + 6 Tbsp. water)
  • 1 cup oat flour (make yourself with gluten free oats, or buy oat flour)
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 1/4 cup almond milk to thin out batter
Instructions
  1. In a small dish, whisk ground flax seeds and water together until well mixed. Place in refrigerator for 10 minutes.
  2. In a medium mixing bowl, take 3 peeled bananas and mash thoroughly with a potato masher.
  3. Add in melted coconut oil, lemon juice and maple syrup. Mix thoroughly.
  4. Add in flax eggs.
  5. To make oat flour, take one cup of gluten free oats and blend with a magic bullet or other high speed blender until oats form an extremely fine flour.
  6. Sift one cup of oat flour into the wet ingredients, along with baking soda and spices. Mix in almond milk to thin out batter and make sure all ingredients are thoroughly blended.
  7. Heat a non-stick griddle to about 350F and spray with a non-stick spray if needed.
  8. Scoop 1/4 cup of pancake batter at a time onto griddle.
  9. Cook first side for 3 minutes, then flip over and cook other side for another 2 minutes.
  10. Serve immediately, and top with extra maple syrup and banana slices (optional).

    I love your recipes. The Sesame ginger turkey meatballs are divine. I had a little trouble getting the pancakes to cook all the way through. The flavor is terrific but my batter was very heavy even with adding extra milk to thin it out. Any suggestions?

      Hi Peggy! The only way I can think of to maybe lighten up the batter would be to use only 1 flax egg and 1 Tbsp. coconut oil. If you give it a try, let me know how it works.

        Danielle – I applied your suggestion to your Gluten-Free Banana Nut Muffins recipe and it worked like a charm. I am working on losing 112 pounds. I am doing it slowly this time and using your recipes as my inspiration to eat and exercise with a healthy long-lasting approach while enjoying delicious, flavorful food. Thank you.
