No-Bake Almond Butter Protein Bites

If you’re an almond butter lover, these no-bake almond butter protein bites are a must. Made from a simple mix of raw almond butter, non-dairy vanilla protein powder, pure maple syrup, and a hint of vanilla, these protein bites take about 10 minutes to assemble before they are ready to eat. This recipe makes roughly 10 protein bites (about 1″ to 1.5″ width each), and saves extremely well in a sealed container in the refrigerator. I rolled my finished bites in some crushed raw almonds, but you could easily do the same with any other crushed nut. You could also coat the outside in coconut flakes, chia seeds, hemp seeds, etc. Feel free to get creative with this one, and let me know what you come up with!

No-bake almond butter protein bites that are quick to assemble and delicious to eat.
  • ¾ cup raw almond butter
  • 2 scoops (30 grams or 2 Tbsp. per scoop – 60g total) non-dairy vanilla protein powder (I use RawFusion) or any vanilla protein powder.
  • 3 Tbsp. 100% pure maple syrup
  • ½ tsp. pure vanilla extract
  • Crushed raw almonds to coat outside (optional)

  1. In a medium mixing bowl, combine all ingredients except crushed raw almonds or other coatings, and mix thoroughly. Dough should resemble the texture of cookie dough. If dough is slightly dry, add in a little more maple syrup.
  2. Take a spoon and scoop out enough dough to create a ball, roughly the size of a golf ball.
  3. Gently roll dough between the palms of your hands to form a ball.
  4. Place finished ball on parchment paper, and repeat until all of the dough is used up. You should have about 10 balls total.
  5. In a food processor, crush almonds or other raw nuts into a small pieces. Do no over process.
  6. Place crushed raw almonds or any other coatings in a shallow dish, and gently roll finished almond butter balls around until the outside is thoroughly coated.
  7. Refrigerate for about 10 minutes to set (optional) and enjoy!

This recipe makes about 10 finished bites. Store bites in a sealed container in the refrigerator.

    “one scoop” “one package”…we don’t all use the same stuff!

          Per ball w/ crushed almonds:
          Calories – 174
          Fat – 12 grams
          Sugar – 5 grams
          Protein – 9 grams

          Without crushed almonds:
          Calories – 154
          Fat – 10 grams
          Sugar – 4 grams
          Protein – 8 grams
