Chocolate Almond Butter No-Bake Protein Squares

Raw almond butter on its’ own is great, but mix it with a little chocolate, and you’ve got something delicious on a whole other level. These Chocolate Almond Butter No-Bake Protein Squares are quick to assemble and taste like dessert. They are a perfect pick-me-up snack on the go, and they save incredibly well in the fridge for up to a week. Say goodbye to the preservatives and artificial sugars found in store bought varieties, and say hello to these 100% natural, homemade squares. You won’t regret it!

100% natural, no-bake protein squares
Ingredients
  • 1 cup gluten free oat flour (make your own with a high speed blender or buy); sifted
  • 1/2 cup vanilla protein powder (I use RawFusion which is dairy free and vegan)
  • 1/2 cup 100% pure maple syrup
  • 1/2 cup raw almond butter
  • 1/4 – 1/2 cup gluten free brown rice crisp cereal (optional, adjust amount to preference)
  • 1 Tbsp. virgin coconut oil; melted
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. high quality sea salt
  • 1 bar 60% cacao bittersweet baking bar
Instructions
  1. In a large mixing bowl, combine oat flour, protein powder, rice crisps and sea salt.
  2. Add in 1/2 cup maple syrup, 1/2 cup almond butter and vanilla extract. Mix thoroughly. If mixture seems too dry, add in a little extra maple syrup. Mixture is supposed to be slightly drier, but not so dry that it won’t stick together when pressed firmly between hands. You do not want the texture to be crumbly.
  3. Take 1/2 of the Tbsp. of coconut oil and add it in to the mixture.
  4. Take the other 1/2 of the Tbsp. of coconut oil and use it to grease an 8 x 8 baking dish.
  5. Take finished ‘dough’ and place it in the baking dish. With hands, firmly press the dough down, packing it tightly and evenly into the dish. Make sure the dough is sticking together. You can use a pastry roller if you would like, but it isn’t necessary. Just make sure to provide plenty of pressure with your hands.
  6. Smooth out the top and place baking dish into the freezer.
  7. In a large pan, bring 1 to 2 inches of water to a boil. Place a small saucepan inside of the large saucepan in order to make a double boiler. Return heat to low and place broken pieces of the chocolate bar into the dry, small saucepan.
  8. Chocolate will begin to melt. Continue to stir occasionally and be careful not to let the water in the large pan return to a boil.
  9. When chocolate has completely melted, remove protein squares from freezer, and slice into 16 squares (4 x 4).
  10. With a spoon, gently drizzle melted chocolate over the top of the squares.
  11. When finished, return squares to freezer for an additional 10 minutes to firm up the chocolate.
  12. When chocolate is firm, squares are ready to eat.
  13. Store squares in saran wrap in the freezer for up to 1 week.

      Hi Jaycee. Depending on what type of protein powder you use, there should be around 3-4 grams of protein per square.
