Sometimes you just want a sandwich. No explanation needed, because we all know that sandwiches are just plain good. Slap your favorite fixings between two slices of bread, and just like that, you have yourself a meal. A delicious meal at that.
Now, if you have been skipping out on sandwiches for dietary concerns, you’re in luck, because this skinny veggie sandwich is a weight watching-sandwich lovers dream. I cut out the mayo, ditched the gluten, and loaded this sandwich up with piles of fresh spinach, tomato, cucumber, red onion, avocado and oil-free hummus. A little freshly ground black pepper on top, and you have yourself a refreshingly light veggie-filled sandwich, full of healthy fats and nutrients.
- ***Hummus:***
- 1 (15 oz.) can organic garbanzo beans; reserve 1/4 of the liquid
- 1 large clove garlic
- 1 tsp. ground cumin
- 2 Tbsp. tahini
- 1 Tbsp. lemon juice
- 1/4 tsp. sea salt
- ***Sandwich:***
- 2 slices of gluten free bread of your choice; lightly toasted
- 1 handful organic spinach
- 1/4 of an organic cucumber; thinly sliced
- Red onion; thinly sliced
- Tomato; thinly sliced
- Avocado; drizzled with lemon juice and thinly sliced
- Fresh ground pepper to taste
- Open can of garbanzo beans and drain until there is 1/4 of the liquid remaining. Empty contents into your food processor and add in garlic, lemon juice, tahini, cumin and salt. Blend until you reach a creamy consistency.
- Place two slices of gluten free bread into toaster or toaster oven and toast until lightly brown.
- While bread is toasting, thinly slice your cucumber, tomato and red onion.
- When bread is finished, let it cool for 1-2 minutes, then spread a generous layer of your hummus on both slices.
- Lay down your spinach, then tomato, onion, avocado slices with lemon juice and cucumber slices. Top with freshly ground black pepper.
- Serve and enjoy!
