Super Bowl Sunday often means one thing; a Super Bowl party, and at that Super Bowl party, it is pretty unlikely to find healthy snack options among the sea of fried faire that seems to be the standard. This year, have no fear! I have some healthier, crowd-pleasing dishes you can make that will let you indulge without feeling guilty, and won’t leave you munching on that untouched veggie platter that got pushed to the corner all night.


Texas Caviar


Texas Caviar is a classic dip in the Lone Star State, and it’s really no wonder as to why as it’s absolutely delicious. Beyond being incredibly tasty, it is full of fiber and veggies, making it a perfectly filling snack. Pair it with some gluten free blue corn tortilla chips, and I guarantee your guests will eat it right up.

For maximum flavor, mix this up the night before and let it settle in the fridge. If you don’t have time for that, give it at least 30 minutes in the fridge before serving.

A Lone Star State favorite that is clean eating approved.
Ingredients
  • 1 can organic black beans; drained and rinsed
  • 1 can organic black eyed peas; drained and rinsed
  • 1 small package of frozen organic corn; thawed
  • 1 jalapeño; seeded and diced
  • 1 red or green pepper; seeded and diced
  • 1/2 cup cherry or grape tomatoes; quartered
  • 1/4 cup green onions; thinly sliced
  • 1/4 cup red onion; chopped
  • 1/2 cup fresh cilantro; chopped
  • ***Dressing:***
  • 2 limes juiced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 large cloves garlic minced
  • 1 Tbsp. + 1 tsp. ground cumin
  • 1 tsp. red pepper flakes
  • Salt and pepper to taste
Instructions
  1. In a large mixing bowl, combine black beans, black eyed peas, corn and veggies. Stir to mix together.
  2. In a smaller dish, whisk together lime juice, olive oil and red wine vinegar.
  3. Add in cumin, garlic, red pepper flakes and salt and pepper to taste. Whisk thoroughly.
  4. Pour dressing over bean and veggie mixture and stir to coat.
  5. Cover bowl in saran wrap, or move dip mixture to a sealed container to settle overnight in the fridge, or at least for 30 minutes prior to serving.
  6. When ready to serve, give it a quick stir once again to combine.
 
Notes
This recipe should make roughly 5.5 to 6 cups of dip.

    I’ve never heard of Texas caviar, but it looks delicious! Very refreshing alternative to traditional party food. Pinned!

      Hi Sherri! I made it initially for a New Years Eve party and it was a hit with everyone, so definitely give it a try!

    I first tasted this at a senior brunch at our church. A man’s wife had made it and sent it along with him while she stayed home. I asked him what it was called and he had no idea. Lol! So I wrote down what I could remember of the ingredients and hit up one of my recipe search engines. And I found you. Yay! I love this recipe. I’m making it for the second time today. First was back on New Year’s. It went fast!
    Oh, and the gentleman caught up with me a few weeks later and told me, “That stuff my wife made? It’s called Texas Caviar!” Lol! Way ahead of you.
