Mango Coconut Chia Seed Pudding


For the first time in about 3 weeks, the sun decided to come out today, and I could not be happier to see it! There is only so much gray and blah you can take before you find yourself going through serious vitamin D withdrawals, so to say the least, I am thankful to see its shining rays. In honor of my vitamin D induced cheerfulness, I concocted this little cup of happiness to share the love with you. This recipe is so incredibly easy to make, and it tastes like paradise in a glass. While mango’s aren’t exactly in season right now, organic frozen mango chunks are, and that’s precisely what I used. Just make sure to not grab the sweetened ones!


Mango Coconut Chia Seed Pudding


If you have a few minutes to spare, make this your mid-morning, mid-afternoon or pre-workout snack. Packed with Omega-3, protein, antioxidants and fiber, chia seeds provide you with a powerful energy boost that will keep you going, even when you’re ready to quit. Just soak 2 tablespoons of chia seeds in 1.5 cups of unsweetened almond milk, and in 5-10 minutes, it’s ready to go!

Simple, quick and delicious.

A tropical twist on chia seed pudding
Ingredients
  • 1/2 cup organic frozen mango chunks (frozen if not in season); thawed
  • 1.5 cups unsweetened almond milk
  • 2 Tbsp. chia seeds; I used the black ones, but you can use either
  • 6 drops of liquid stevia; I used SweetLeaf Sweet Drops Sweetener
  • Pinch of raw, unsweetened coconut shreds to top (optional)
Instructions
  1. In a medium sized mixing bowl, combine mango chunks (thawed if frozen), chia seeds, liquid stevia and almond milk. Stir to mix.
  2. Cover with saran wrap and place in the fridge to thicken. Stir every few minutes to make sure chia seeds don’t clump together.
  3. When pudding reaches the consistency of tapioca, it is ready to be served.
  4. Top servings with a pinch of unsweetened coconut shreds and enjoy!

    This looks really good! Have yet to try chia seeds but recipes like this are on the list when the day comes!

    Do you use hemp seeds at all? They’re a big super-food too and they apparently can be added to just about anything.

      Chia seeds are great, so when you do get around to trying them, I would definitely give this a try if you’re a mango fan! I love using hemp seeds too, and I often add them to my chia seed pudding, shakes, steel cut oats, etc. The fact that they are virtually tasteless makes them easy to add to almost anything :)

        Awesome! I just got some chia seeds and they’re soaking in almond milk right now. I was going to get some hemp seeds but they were kinda expensive, at least at that particular store. My word they have a lot of protein in them! If I find them for a more reasonable price I’ll start adding them to everything, along with chia seeds.

          Of course! I’m not sure if you have a Costco around you, but I get my hemp hearts from there, and you can get a bulk size bag for about $13 that will last you a looooooong time! Also, if you look on Amazon, you can sometimes find really good deals on stuff like hemp hearts and chia seeds, or actually just about anything :)

            Yes, there is a Costco about 20 minutes away and I have seen both chia and hemp seeds there. I didn’t get any because I didn’t want to buy a whole bunch then find out I don’t like them (yay for experience doing this too many times! ^_^). But for that price I might just get them next time I’m up there. Nutrition is AWESOME!

      Hi Dave! I actually do not have them posted because I find that people often sub in their own ingredients or different brands which would make the nutrition information inaccurate. If you want to find the nutrition info for each of my recipes, my recommendation is the MyFitnessPal app. I know if you are on the actual website, it allows you to import recipes directly from whatever site your on. Hope that helps!!
