Sweet Potato Vegan Bowl with Chickpea-less Hummus


It has been a busy, busy week in my household, and busy weeks can sometimes lead to less than fantastic eating habits. The past few days haven’t been awful, but considering that I am supposed to be in wedding shape mode, they haven’t exactly been ideal. Ugh, I swear, there is something about having a deadline you need to shape up by that makes you want to nervously snack with reckless abandon. Just last week, I made Ben hide a box of gluten-free crackers in my garage somewhere, just so I could put the damn things down. I honestly could not. stop. eating. them. It was as if my mouth and hands took on a life of there own, teaming together like they had some kind of binge-eating system perfectly orchestrated. Hand grabs crackers, mouth eats said crackers, and that cycle continues on repeat until my hand hits the realization that there aren’t any crackers left, aka – the bottom of the bag. I wish I could say that I am just a helpless victim in this scenario, but unfortunately that just isn’t the case.

Whenever I find myself getting off track with my eating habits, I feel like I have to somewhat trick my brain back toward choosing healthier options. You know, like actual meals that you use eating utensils for (because one large box of gluten-free crackers doesn’t count). The absolute worst thing for me personally is trying to jump back on track with a strict regime of eating only salad, because no matter how big or filling it is, I always feel like I am getting cheated somehow, and that feeling has the ability to turn me into quite the unhappy camper. Even though I absolutely love a good salad, the term ‘salad’ after a starch-laden binge seems to equate to thoughts that include words like ‘hunger,’ ‘sad’ and ‘boring.’

Thankfully, today’s recipe is anything but sad or boring, and certainly won’t leave you hungry. Not only is this Sweet Potato Vegan Bowl hearty, it is full of essential nutrients that will leave you feeling like a million bucks. Loaded with protein rich quinoa, sweet potato, roasted brussels sprouts, hemp hearts and kale, this savory mix is only made better by the addition of a tangy chickpea-less hummus dolloped on top. A hearty vegan dinner bowl, loaded with sweet potatoes, kale, brussels sprouts, hemp hearts and quinoa, topped with a chickpea-less hummus.
Ingredients
  • 1/2 cup uncooked quinoa; rinsed
  • 1.5 cup vegetable broth
  • 1 sweet potato; scrubbed, peeled and cubed
  • 1 Tbsp. + 1 tsp. virgin, unrefined coconut oil
  • 1 cup shredded brussels sprouts (I used the bagged variety from Trader Joe’s)
  • 1 cup shredded kale; julienned (I used Tuscan kale from Trader Joe’s)
  • 1 Tbsp. shelled hemp hearts (optional)
  • High quality finely ground sea salt and black pepper to taste
  • Small amount of preferred non-stick cooking spray
  • ***Chickpea-less Hummus:*** (makes approx. 6 servings)
  • 2 organic zucchinis; peeled and chopped
  • 3/4 cup tahini
  • 2 Tbsp. nutritional yeast
  • 1/2 cup fresh lemon juice
  • 2 medium or 3 small garlic cloves; minced
  • High quality sea salt to taste
Instructions
  1. Preheat oven to 400F.
  2. In a small, microwave safe dish melt 2 Tbsp. of coconut oil.
  3. Scrub and peel your sweet potato, then cut it into cubes. When finished, add sweet potato into a medium size mixing bowl and toss with 1 Tbsp. of melted coconut oil and salt to taste.
  4. Place sweet potato on a foil lined baking sheet and bake on the middle rack for 30 minutes, flipping potatoes every 10 minutes.
  5. Prepare your kale and brussels sprouts, and place mixture into bowl to coat with remaining coconut oil.
  6. Season with salt and pepper to taste and place on a separate foil lined baking sheet.
  7. Bake for 10 minutes, flipping halfway through once potatoes are finished.
  8. In a mesh strainer, rinse quinoa until water runs clear.
  9. Coat the bottom of a medium sauce pan with a thin layer of non-stick cooking spray and turn heat on high. Add in rinsed quinoa and ‘toast’ until quinoa seems dry. No water should be visible.
  10. Keep burner on high and add in 2 cups of vegetable broth.
  11. Bring quinoa to a boil, cover and reduce heat to low. Cook for 15 minutes, or until little to no water is left.
  12. While quinoa is cooking, prepare your hummus.
  13. In a food processor or high speed blender, combine all of your ingredients and blend until mixture is completely smooth.
  14. To assemble your bowl, fill half of the bowl with quinoa, 1/4 of the bowl with sweet potatoes and the last 1/4 with the kale/brussels sprouts mixture. Place a dollop of your prepared hummus in the center, and top with hemp hearts and additional salt or pepper if desired.

    I am curious — is chickpea-less hummus a healthier choice than hummus made with chickpeas?

    I just discovered your site and I am amazed by the delicious recipes. I thought clean eating meant bland and boring eating. Evidently not! I am going to make a week’s menu using only your breakfast, lunch, and dinner recipes. Thanks!

      Hi Donna!
      The chickpea-less hummus is healthier in the sense that you’re getting more veggies in, but that’s not to say chickpeas aren’t healthy! I know a lot of people have a hard time digesting beans, so it’s really an alternative for them, or anyone who wants to sneak in veggies wherever possible :)
