Ingredients
  • ***Salad:***
  • 4 cups organic curly kale; chopped into small pieces with hard stems removed
  • ¾ cup dry millet
  • 1¾ cup low sodium vegetable broth
  • ½ cup dried, unsweetened cranberries
  • ⅓ – ½ cup raw pecan halves; chopped
  • ⅓ cup organic goat cheese (optional)
  • ***Dressing:***
  • 1 Tbsp. 100% pure maple syrup
  • 1 tsp. dijon mustard
  • 2 Tbsp. raw apple cider vinegar
  • 1 Tbsp. organic grapeseed oil

  2. When millet is finished, remove from heat and gently fluff with a fork. Set aside to let cool.
  3. In a large mixing bowl, combine chopped kale, cranberries, chopped pecans and goat cheese.
  4. Add in cooled millet and toss to thoroughly combine.
  5. In a small dish, combine all ingredients for the dressing, whisking thoroughly.
  6. Pour dressing over salad and toss to evenly coat.
  7. Add salt and pepper to taste.
  8. Store covered in refrigerator or serve immediately.
