Cranberries, pecans and kale, oh my! In honor of national kale month, I present to you this incredibly tasty, autumn-themed dish that is certain to win over even the most kale-skeptical of dinner guests. The winning combination of protein-rich millet dressed with tart cranberries, pecans and a maple vinaigrette make this dish the perfect accompaniment to any meal, especially my Hard Cider Beer Butt Chicken.
Cranberry Pecan Kale Salad

An autumn inspired side, complete with cranberries, pecans and a maple vinaigrette.
Ingredients
- ***Salad:***
- 4 cups organic curly kale; chopped into small pieces with hard stems removed
- 3/4 cup dry millet
- 1 3/4 cup low sodium vegetable broth
- 1/2 cup dried, unsweetened cranberries
- 1/3 – 1/2 cup raw pecan halves; chopped
- 1/3 cup organic goat cheese (optional)
- ***Dressing:***
- 1 Tbsp. 100% pure maple syrup
- 1 tsp. dijon mustard
- 2 Tbsp. raw apple cider vinegar
- 1 Tbsp. organic grapeseed oil
- Pink Himalayan salt and pepper to taste
Instructions
- In a small/medium pot, bring 1 3/4 low sodium vegetable stock to a boil. Add in millet, cover and reduce heat to medium/low, cooking for 15 minutes. When 15 minutes is up, keep millet covered and reduce heat to low and cook for an additional 5 minutes.
- When millet is finished, remove from heat and gently fluff with a fork. Set aside to let cool.
- In a large mixing bowl, combine chopped kale, cranberries, chopped pecans and goat cheese.
- Add in cooled millet and toss to thoroughly combine.
- In a small dish, combine all ingredients for the dressing, whisking thoroughly.
- Pour dressing over salad and toss to evenly coat.
- Add salt and pepper to taste.
- Store covered in refrigerator or serve immediately.
