Worst blogger ever goes to me this past month!! Who would have thought that moving your entire house for a complete home remodel at 6 months pregnant would be difficult? Apparently not me, considering I am currently in the middle of this exact situation. I won’t sugar coat it, this moving stuff is S-T-R-E-S-S-F-U-L, and probably the very last thing I need to be doing right now, but at the same time, I know it will all be worth it. I just have to keep reminding myself that it will only be another few weeks.
As you can probably tell from my complete lack of posts lately (sorry!), I have had absolutely zero time to get any new posts together. Hell, I have barely had time to cook a decent meal to eat, so please accept my apologies and know that within a matter of two weeks, my life will be (somewhat) back to normal.
Okay, now that you know I haven’t completely fallen off the grid, it’s time to focus on some healthier St. Patrick’s Day dishes! As you already know, I unfortunately haven’t had much time to throw together some fun new dishes, but I do have a few that will put you in a festive mood! From smoothies to side dishes, hopefully you will find some healthy and green inspiration to celebrate!
1.) Creamy Lemon Pepper Zucchini Pasta with Peas
2.) Creamy Kiwi Green Smoothie
3.) Mint Chocolate Chia Pudding
6.) Quinoa, Avocado and Sweet Potato Timbale
7.) Creamy Garlic Zucchini Noodles

August 30, 2016 at 4:40 pm (8 years ago)These lightly sauteed green beans go perfectly with fresh, homemade pesto. This dish is fancy enough to satisfy the foodies at any St. Paddy’s Day get-together and simple enough that the green bagel-loving crowd won’t be scared away.
