Brownie Batter Chia Seed Pudding – a little bowl of health that only tastes sinful.
Ingredients
  • 1.25 cups unsweetened coconut milk
  • 1 Tbsp organic cacao powder (I use Nativas brand)
  • 1/4 cup chia seeds (you can use white or black)
  • 1.5 Tbsp sprouted sunflower seeds (I use the Go Raw brand)
  • 1 tsp ground flaxseeds
  • 1/2 tsp unsweetened coconut flakes
  • SweetLeaf liquid stevia chocolate drops to taste (if you don’t mind sugar, you can substitute with honey or coconut nectar)
Instructions
  1. In a small saucepan, heat coconut milk until it starts to gently bubble.
  2. Add in the sweetener of your choice and cacao powder, whisking thoroughly to mix.
  3. Add in chia seeds and 1 Tbsp. of the sunflower seeds, whisking until thoroughly mixed.
  4. Remove mixture from heat and let stand until cool.
  5. Top with remaining sunflower seeds, flaxseeds and unsweetened coconut flake.
  6. Store in fridge in a sealed container or eat immediately.
