Coconut Paleo Porridge


I’m an oatmeal girl at heart. I mentioned this in my Against The Grain post, and since giving up grains, I’ve really felt a void in my morning breakfast routine. Chia seeds have been my stand in, and an amazing one at that, but sometimes I miss the warming bowl of comfort that oatmeal provided.

Well guess what? I think I’ve figured out a pretty good paleo-approved replacement, and it only requires a handful of ingredients and about 5 minutes from start to finish.

If you’re not a fan of coconut, move along. This dish is full of it with organic coconut flour, finely shredded unsweetened coconut flakes, and unsweetened coconut milk. Needless to say, it’s going to taste like coconut. If you’re avoiding sugar, you’re in luck as it is completely sugar-free thanks to my beloved SweetLeaf flavored Stevia Drops (which I will be doing a full review on soon).

Gluten free, grain free, dairy free, paleo, sugar free, vegan…this recipe can fit into the majority of diets out there, and the really great news is that its under 300 calories total

A paleo approved breakfast that is grain, gluten, dairy and sugar free.
Ingredients
  • 1.5 cups unsweetened coconut milk
  • 4 Tbsp. unsweetened finely shredded coconut
  • 4 Tbsp. organic coconut flour (I use Nativas brand)
  • SweetLeaf Liquid Stevia Drops to taste (I used the Vanilla Creme flavor)
  • Cinnamon and chopped raw pecans for topping (optional)
Instructions
  1. In a medium saucepan, whisk coconut milk and coconut flour together, bringing to a slight boil (mixture should thicken).
  2. Add in shredded coconut and stir to thoroughly combine.
  3. Remove from heat and stir in desired amount of SweetLeaf Liquid Stevia Drops.
  4. Pour into dish and top with cinnamon and chopped pecans.
