Italian Beyond Sausage and Peppers


This simple and delicious Italian Beyond Sausage and Peppers recipe is an absolute breeze to whip up. It’s a classic meal that never gets old, with juicy chunks of Beyond sausage, combined with diced tomatoes, garlic, oregano, fresh basil, and lots of red and green bell pepper and onion. It’s definitely a comforting meal, but it’s not going to leave you feeling overly stuffed like a big plate of pasta would. Honestly, its the perfect dish if you’re craving Italian, but looking to limit the carbs.

If you want to make it spicy, use the Italian Hot Beyond Sausages, and if you prefer more mild, use the regular Beyond Brats. Serve on its own with a side salad, and voila! A healthy, vegan, low carb dinner. Buon appetito!

Italian Beyond Sausage and Peppers

Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 1 pack of Beyond Sausage – Italian Hot if you want spicy, Regular Brats if you prefer more mild
  • Drizzle of avocado or olive oil
  • 1 green pepper; thinly sliced
  • 1 red pepper; thinly sliced
  • sweet onion; thinly sliced
  • 2 cloves garlic; smashed and minced
  • 1 tablespoon tomato paste
  • 1 (14.5-ounce) can diced tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped fresh basil + extra for garnish

Instructions: 

  1. Add oil to a large frying pan and heat over medium-high heat. Add Beyond sausages and cook until browned on all sides, rotating constantly for about 6 minutes. Remove sausage from pan and set aside.
  2. Add prepared onion and peppers to grease left in pan and cook over medium heat until softened. Add garlic and cook for until fragrant, or about 30 seconds.
  3. Add in your diced tomatoes, tomato paste, red pepper flakes, salt, oregano and black pepper. Stir until thickened over medium/low heat.
  4. Slice sausage into 1 inch pieces (about 4 pieces per link).
  5. Return sausage to pan along with fresh basil and stir to thoroughly combine.
  6. Garnish with a little additional basil if desired for serving.
