Mint and chocolate make a dynamic duo when it comes to ice cream, with mint chocolate ranking as one of the top ten favorite flavors for many. It’s no surprise! The cool, refreshing mint paired with the rich, velvety chocolate creates a flavor combination that’s hard to beat. And now, you can enjoy that same indulgent flavor in a much healthier way.
Mint Chocolate Chia Pudding
While mint chocolate might be a go-to in the ice cream aisle, it’s been making its way into all sorts of recipes—from cookies to shakes, and everything in between. Today, I’m sharing a healthier way to satisfy your mint chocolate cravings without the guilt. This mint chocolate chia pudding is just as delicious and decadent as any ice cream, but with far fewer calories and fat. It’s a dessert you can feel good about eating!
This chia seed pudding is made with all-natural, wholesome ingredients, free from gluten, dairy, and any artificial sugars. And that beautiful green coloring in the coconut mint whipped cream? It’s completely natural, too. Instead of food coloring, I’ve used matcha tea — a vibrant green Japanese tea powder. Not only does it give the pudding a stunning color, but it’s also full of antioxidants and nutrients. Just remember, matcha powder is different from regular green tea powder, so make sure you grab the right one!

Mint Chocolate Chia Pudding Recipe
Prep Time: 20 minutes
Total Time: 20 minutes
Serves: 2-3
Ingredients
Chocolate Chia Seed Pudding:
-
1.25 cups unsweetened coconut milk (or almond milk)
-
¼ cup chia seeds (I prefer white chia seeds)
-
2 Tbsp organic cocoa powder
-
1 Tbsp 100% pure maple syrup
Mint Coconut Whipped Cream:
-
1 can chilled Thai Kitchen unsweetened coconut milk (full-fat version)
-
¼ tsp mint extract
-
½ tsp matcha green tea powder (for coloring)
Instructions
-
In a medium mixing bowl, combine the chia seeds, coconut or almond milk, cocoa powder, and maple syrup. Stir well to combine. Let it sit and stir every couple of minutes for 10-15 minutes until it reaches a pudding-like consistency.
-
In another medium bowl, take the chilled coconut milk and scoop out the thick cream (discard the liquid or use it in a smoothie). Add the matcha powder and mint extract.
-
Use a hand mixer to whip the coconut cream on high for about 3-5 minutes until it forms a fluffy whipped cream texture.
-
To serve, layer the chia pudding and whipped cream in a dish, starting with a layer of pudding, followed by a dollop of mint coconut whipped cream, and finishing with another layer of pudding.
-
Serve and enjoy!
This mint chocolate chia pudding is a perfect treat for anyone craving a healthy, guilt-free dessert. Not only does it deliver on flavor, but it’s packed with nutrients and can be a great way to enjoy your mint chocolate fix in a whole new way.
