Not sure about you, but my skin has taken a beating this winter.  I’m sure the fact that my now 8 month old daughter still doesn’t like to sleep hasn’t helped, but let’s just say that my skin has seen better days. As always, I try to find ways to fix the issue from within, and when I stumbled across this recipe from nutritionist Kimberly Snyder, I knew I had to give it a try.

This smoothie is a perfect blend of nourishing ingredients that will help solve your dry skin woes from the inside out. While the original recipe calls for almond milk and coconut oil, my recipe uses coconut water and fresh young coconut meat. If you are unable to find the packs of fresh young coconut meat (I found them at Whole Foods by the frozen fruit), by all means, use virgin, unrefined coconut oil! You certainly won’t be missing out on any health benefits!

If your skin is suffering, give this smoothie a try. When my skin started really acting up, I incorporated this smoothie into my day as a mid-morning snack and it has actually made a notable difference. The good fats are crucial for young looking skin (among other things), and many people forget that when trying to eat a clean diet, so don’t let the fat content scare you off from giving this recipe a go.

A skin plumping smoothie that nourishes from within
Ingredients
  • 1/2 ripe avocado
  • 1 2oz pack frozen young coconut meat (I used Inner-Eco brand, or 1 tsp. unrefined coconut oil)
  • 1 cup frozen organic mango chunks
  • 1 cup pure coconut water
  • Optional: add in 1 tsp. coconut oil with the original recipe
Instructions
  1. Combine all ingredients into a high speed blender (I use a Vitamix), and blend until smooth.
