3 Ingredient Nut-Free Date Bars


I’m going to keep this post short and sweet just like these 3 Ingredient Nut-Free Date Bars. Badum bum.

But really, there isn’t much to say other than that these nut-free mini Larabar knockoff’s are pretty damn delightful, and stupidly easy to make. Not only are they gluten, dairy and grain free, these bad boys are made with seeds, making them free of the top 8 allergens. All you need is a food processor, raw pumpkin seeds, Sunbutter and dates. Let’s go.

3 Ingredient Nut-Free Date Bars

Serves: Makes 12 mini squares
Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 1 cup pitted medjool dates
  • 1/4 cup Sunbutter
  • 1/4 raw pumpkin seeds
  • 1 Tbsp. water
Instructions:
  1. In a food processor, combine medjool dates, Sunbutter, raw pumpkin seeds and water.
  2. Blend on high, stopping periodically to move any mixture down the sides. Mixture should be really blended together with no chunks.
  3. Lay down a piece of parchment paper and pick up the date mixture, using your hands to squeeze it together into one big clump. Mash it down on the sheet of parchment paper to form mixture into one even rectangle shape using the sides of your hands to make the edges straight.
  4. Slice into 6 even squares, then again into halves to create 12 mini squares. For best results, store in the fridge.
