Chipotle Mushroom Beyond Tacos


Tacos are my favorite food. Hands down. To me, there is just no competition because the options are truly endless. The flavors, the toppings, I could go on and on, but you can customize them to whatever vibe you’re feeling, and that in my opinion makes them favorite food worthy.

Today I am sharing my family’s current favorite taco obsession, Chipotle Mushroom Beyond Tacos. Mushrooms sautéed in chipotle peppers give a spicy yet smoky flavor, roasted peppers and onions balance it out with a little bit of sweetness, and Ground Beyond Beef seasoned with my Mexican seasoning blend brings it on home. I used my favorite Siete Cassava Flour tortillas to keep it grain and gluten free, and topped it all off with some finely chopped cilantro and green onions for freshness and color.

If you are taco lover like me, you really can’t go wrong with this recipe. I mean, just look at it.

Chipotle Mushroom Beyond Tacos

Serves: 3-4
Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 6 multi colored bell peppers; core and seeds removed and sliced in thin strips
  • 1 large or 2 small sweet onion(s); sliced in strips
  • Spray olive oil or a small amount of olive oil to coat
  • 1 can chipotle peppers in adobo sauce
  • 3 cups sliced brown mushrooms; stems removed
  • 1 pack of Beyond Ground Beef
  • A splash of vegetable broth
  • 8-10 tortillas (I used Siete)
  • Finely sliced green onions and cilantro for garnish

Mexican Seasoning Blend:

  • 1 Tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1.5 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 425F and lightly grease a large baking sheet with spray olive oil.
  2. Place strips of bell peppers and onions in one even layer on baking sheet and spray with olive oil. Bake for about 20 minutes, or until peppers and onions are lightly charred and soft.
  3. In a small dish, combine your spices for your Mexican seasoning blend.
  4. In a large frying pan, cook your Beyond ground beef according to package instructions. When the Beyond beef is finished, add in a your seasoning blend and stir to thoroughly coat the Beyond beef. Add in a splash or two of vegetable broth, stir to combine and turn pan to low heat.
  5. In a separate medium sized frying pan, sautee sliced mushrooms on medium/high heat in a small amount of oil. Once mushrooms are soft, about 5 minutes in, add in two, finely diced chipotle peppers in their sauce to the pan. Stir to thoroughly coat mushrooms and continue to sautee for an extra minute or two. When finished, remove pan from heat.
  6. Place a tortilla (I used in a cast iron or stainless steel skillet over medium heat (don’t add oil). Cook for 30 seconds on each side. Remove and cover with a slightly damp paper towel to keep warm. Repeat with remaining tortillas.
  7. Assemble tacos, by adding taco meat, mushrooms and topping with peppers and onions. Garnish with cilantro and green onions. Serve immediately.
