Introducing your new favorite weeknight dinner. This Asian Beyond Beef Bowl is my super easy take on a Korean BBQ bowl that comes together in under 20 minutes. While its’ fantastic on its’ own, it’s also super easy to doctor up with fun toppings like kimchi or shredded veggies. I personally kept it on the more mild side for the kiddos, but the spicy factor can easily be ramped up for those who like it hot with the addition of a little more chili garlic sauce or some Sriracha on top.

Beyond Ground Beef keeps this recipe vegan, but even if you aren’t following a plant based diet, you could absolutely make this with some grass fed ground beef. Just use the same amount as you would with the Beyond (1lb).

Top with finely sliced green onions and sesame seeds, or get creative with your favorite Asian toppings.

Serves: 2-3
Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 1 lb package of Beyond Ground Beef
  • 1 large yellow onion; diced
  • 1 teaspoon avocado or olive oil
  • 1/4 cup gluten free hoisin sauce
  • 2 medium sized cloves garlic; smashed and minced
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons minced ginger
  • 1 teaspoon chili garlic sauce (2 if you prefer spicy)
  • 1 8oz can water chestnuts; drained and chopped into small pieces
  • 2 teaspoons dark sesame oil
  • 1 bunch of green onions; finely sliced; reserve some for topping
  • 2 cups brown rice (I used the frozen microwave pack from Trader Joe’s, 1 pack is 2 cups)
  • Sriracha, kimchi, extra green onions, sesame seeds for topping (optional)

Instructions:

  1. Heat a large skillet over medium-high heat. Cook and stir Beyond Ground Beef in the skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl.
  2. Cook and stir onion in the same skillet used for Beyond Ground Beef with 1 teaspoon of oil until slightly tender, or about 5 to 10 minutes.
  3. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chili garlic sauce into onions. Stir to thoroughly combine.
  4. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the green onions just begin to wilt, about 2 minutes.
  5. Serve over brown rice and top with any of the optional toppings listed above.
