Low-carb, plant based burger lovers rejoice! This Beyond Burger Bowl is exactly what you’ve been looking for.

At this point in life, i’m sure you’ve tried a lettuce wrapped burger at least once, but this burger bowl is different. It’s more salad than anything, but burger salad sounds weird, so we’re going to stick with bowl. Beyond Ground Beef takes center stage on a bed of green leaf lettuce, while pickles, red onion, grape tomatoes, avocado and my special sauce dressing make this a home run.

This recipe is a keeper, if I do say so myself. It’s perfect as BBQ season approaches, or any time you find yourself craving a burger.

And it’s pretty healthy, so really, what’s not to love? Dig in and enjoy.

Beyond Burger Bowl

Gluten free, dairy free and vegan.
Ingredients:
  • 1 package of Beyond Ground Beef (if you’re substituting regular ground beef, use 16 oz.)
  • 1/2 small sweet onion; finely diced
  • 1 teaspoon yellow mustard
  • Salt, pepper, garlic powder and onion powder to taste
  • 2 heads green leaf lettuce; rinsed, dried and cut up
  • Thinly sliced red onion
  • Avocado slices
  • Grape tomatoes
  • Bread and Butter pickle slices – Bubbies brand is my favorite

Special Sauce Dressing:

  • 1/2 cup vegan mayonaise
  • 3 tablespoons ketchup – I used Primal Kitchen Unsweetened Organic Ketchup
  • 2 tablespoons sweet pickle relish
  • 1.5 teaspoons stevia granulated sugar
  • 1.5 teaspoons distilled white vinegar

 

Instructions:

  1. In a large frying pan, cook your Beyond Ground Beef with your prepared sweet onion according to package directions. This should take about 6 minutes.
  2. When finished, season to taste with salt, pepper, garlic powder and onion powder, then stir in 1 teaspoon of yellow mustard. Mix to thoroughly combine. You can add in a little more if desired.
  3. While Beyond Ground Beef cooks, prepare your special sauce dressing by mixing all of your ingredients together in a bowl. Set aside.
  4. Prepare your veggies and assemble your bowl as pictured above. Top with finished Beyond Ground Beef and pour desired amount of special sauce dressing over the top.
  5. If you want to make this in advance, store the Beyond Ground Beef and special sauce dressing in separate containers.
