Sweet Potato Nacho Skillet


Happy Cinco De Mayo! I’m going to keep this post short and sweet, because really, you’re here for the recipe, not a story. This Sweet Potato Nacho Skillet is free of all the usual suspects and is way more nutritious than traditional nachos thanks to the sweet potato base. I kept it vegan with Beyond Ground Beef and vegan cheese shreds, but if you aren’t vegan, you could absolutely sub grass fed ground beef and regular cheese if your heart desires.

Sweet Potato Nacho Skillet

Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 2 sweet potatoes; small
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 pack Beyond Ground Beef
  • 1 recipe of my Mexican seasoning blend (below)
  • Splash of vegetable broth
  • 1/2 can black beans; drained and rinsed
  • 1 jalapeño pepper; sliced (optional)
  • 1/2 cup vegan mexican cheese blend shreds (I used a mix of Daiya pepper jack and cheddar)
  • 1/2 avocado; sliced
  • pico de gallo; optional
  • green onion; for garnish

Mexican Seasoning Blend:

  • 1/2 tablespoon chili powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 3/4 teaspoons ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 400˚F.
  2. Evenly slice sweet potatoes into rounds; about 1/4 inch thick.
  3. In a medium-sized bowl, toss rounds with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper until well-coated.
  4. Lay rounds flat on a parchment-lined baking sheet and set aside.
  5. Bake the sweet potatoes in the oven for 20 minutes.
  6. In a large frying pan, cook your Beyond ground beef according to package instructions. When the Beyond beef is finished, add in a the Mexican seasoning blend and stir to thoroughly coat the Beyond beef. Add in a splash or two of vegetable broth, stir to combine and remove pan from heat.
  7. Line the bottom of a medium-sized skillet with the sweet potato rounds. Top with Beyond ground beef, black beans, jalapeño if desired, and vegan cheese. Broil for 5 or so minutes until toppings are heated through and cheese is melted.
  8. Garnish with avocado, pico de gallo, and green onion. Serve immediately.
