Vegan Dirty Rice


Dirty Rice is a Cajun dish that gets its “dirty” color traditionally from finely chopped chicken livers and ground beef or pork. My version of this dish gets its “dirty” color from some Beyond Sausage. That’s right, no chicken livers required.

This recipe is so easy to throw together, making it a perfect weeknight meal when you are craving something hearty with a little Cajun kick. We typically have some pre-cooked brown rice in the fridge for easy meals, so with that step out of the way, this recipe took about 30 minutes total, including prep. You’ll need about 6 cups of brown rice cooked for this recipe, so if you’re using the microwave bags, you’ll need three.

Simple, quick and super delicious. What more could you want?

Vegan Dirty Rice

Gluten free, dairy free, grain free and vegan.
Ingredients:
  • 1 pack of Beyond Sausage – Italian Hot if you want more spicy, Regular Brats if you prefer more mild
  • 2 tablespoons olive oil
  • 2 clove garlic; smashed and minced
  • 1 large sweet onion; finely chopped
  • 1 stalk celery; chopped
  • 1 medium green bell pepper; chopped into small pieces
  • 1 cup low sodium vegetable broth
  • 6 cups cooked brown rice
  • 1/4 teaspoon cayenne
  • 1 teaspoon cajun seasoning
  • 1/4 cup fresh Italian parsley leaves; chopped
  • Salt and freshly ground black pepper to taste

Instructions: 

  1. Add a small drizzle of oil to a extra large frying pan and heat over medium-high heat. Add Beyond sausages and cook until browned on all sides, rotating constantly for about 6 minutes. Remove sausage from pan and set aside.
  2. Add prepared onion, green pepper and celery to grease left in pan with remaining olive oil and cook over medium heat until softened. Add garlic and cook for until fragrant, or about 30 seconds.
  3. Slice up your Beyond Sausage and return to the pan, stirring to thoroughly combine. Season with salt and pepper.
  4. Add in 1 cup of low sodium vegetable broth and cayenne. Cook until the broth has reduced a little, then add the cooked rice and parsley and stir thoroughly.
  5. Taste and season with salt, pepper and Cajun Seasoning. Stir to thoroughly mix.
  6. Serve and enjoy.
